I founded and operate Saiko Sushi, a growing restaurant company with two locations in San Diego. Our concept is progressive sushi. Our objective is to use fish and produce sourced locally. I select and purchase fish daily from local fish mongers and fishermen contacts which I have personally developed during my 20 years in the industry. I procure local produce from various Farmers' Markets each week. I use these products as the basis for the two distinct, dynamic, seasonally focused menus which I have created, including the first sushi menu in San Diego to feature wild caught, local seafood. Additionally I am a Certified Sake Professional (C.S.P.) and have collaborated on the development of one of the most comprehensive sake programs in the nation. I manage all aspects of business including accounting, cash flows, costing and forecasting. I created separate and independent financing structures built around both private debt and equity for each restaurant.
